We’re all struggling with weight loss and trying very hard to reach our goal by the end of this year. But with Christmas just around the corner, it is harder than hard to meet the target. Why, you wonder?

It’s hard to follow a strict diet and workout regime while you’re busy eating gingerbread, candy cane, hot chocolate with marshmallows and plum cake. What if we told you that you can enjoy the delectable plum cake without worrying about gaining those extra kilos?

Keto Plum Cake Recipe

INGREDIENTS

1 stick unsalted butter1/2 cup Low carb brown sugar/Cane sugarTiny pieces of plum (you can also use frozen plum)1 1/3 cups blanched almond flour2/3 cup coconut sugar1 1/2 tbs baking powder1/2 tbs cinnamon powder2 eggs1 tbsp vanilla extract

METHOD

Pre-heat the over to 350 FAdd melted butter and brown sugar and mix until a good pasteIn another bowl, mix all the dry ingredients (almond flour coconut sugar, baking powder, cinnamon and a pinch of salt)Keep the dry mix asideNow mix the remaining melted butter with almond milk. Slowly add in the vanilla extract and eggs.Mix all the ingredients until a fine pasteSpread the batter out evenly and add the plums right at the top.Bake the cake for at least 35 minutes.Remove from the over and cool the pan for at least 30 minutes.

You can always garnish the cake with some whipped cream. Or you can warm a slice of cake and enjoy it with a serving of soy ice cream.
