Method
Place the avocado, red pepper, and red onion in a bowl. Squeeze over the lemon juice and toss to combine.
Season with black pepper, then cover and set aside in the fridge until needed.
In a separate bowl, combine the cherry tomatoes and olive oil, seasoning with salt flakes.
Cover and set aside at room temperature until needed.
When ready to serve, simply combine all the elements and serve over the baby spinach. Top with the fried halloumi fingers.
Method
In a large saucepan with a well-fitting lid, combine fish stock and water and bring to the boil. Add the cauliflower and bay leaf, then cover and leave to simmer over a medium to high heat for 18 to 20 minutes until the cauliflower is tender.
Remove the pan from the heat and use a slotted spoon to remove half of the cooked cauliflower florets, setting them aside in a bowl for now.
Remove and discard the bay leaf, then set this pan and its contents aside.
Meanwhile, place a large non-stick frying pan or wok over a medium heat. Add the bacon lardons and fry for eight to nine minutes until cooked through and almost crispy.
Remove with a slotted spoon and set aside on a plate. Reduce the heat to low, then melt the butter in the same pan.
