I was skeptical when I started seeing cauliflower as a substitute for some of my favorite foods: grilled cheese, mac and cheese, pizza (crust), bread, mashed potatoes, appetizers, etc. And then I started trying some of the cauliflower recipes and was pleasantly surprised.
It seems the reason cauliflower works in so many recipes and in several different ways is that it has a relatively neutral flavor that absorbs seasons and fats well. It’s a versatile little vegetable! Turns out that it’s an especially good substitute for potatoes.
This mashed cauliflower recipe is creamy and flavorful! The butter, garlic and Parmesan cheese combination seems to be the perfect flavor trio (with the help of your food processor). Ingredients
1 medium cauliflower (about 1 pound), trimmed and cut into florets
2 tablespoons unsalted butter, softened
1 teaspoon garlic, minced
1/4 cup grated Parmesan cheese
1 teaspoon kosher salt (or to taste)
1/8 teaspoon black pepper (or to taste)
Here’s how to make it:
Add 2 tablespoons of water to the bottom of a microwave-safe bowl. Place the florets in bowl and cover with a microwave-safe plate. Microwave on high for about 10 minutes or until cauliflower is tender.
While the florets are in the microwave, place the butter, garlic, Parmesan, salt and pepper in the bowl of your food processor or blender. When the cauliflower is cooked, drain it carefully (bowl and plate will be hot) and add it to the food processor with the other ingredients. Process until smooth (no lumps!), about 1 to 2 minutes.
